Summer Veggie Pasta

INGREDIENTS

  • 1 package GF pasta
  • marinara sauce
  • 2T olive oil
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 2 small zucchini
  • 2 small bell peppers
  • 1C corn
  • 6 fresh basil leaves chopped
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/4tsp pepper
  • 1/2 tsp salt
  • 1-2C mozzarella

INSTRUCTIONS

  1. boil water to cook pasta
  2. sauté onion and garlic ~2 min
  3. add zucchini, pepper, corn and sauté until tender
  4. add sauce to pasta, add spices
  5. add veggies to pasta and sauce when ready
  6. portion out onto plates and top w/ cheese if wanted. fold into melt cheese
